What are strengths of the Secchia Institute for Culinary Education program?

We as a faculty are committed to a hands on practical training culinary experience. Nothing allows you more focus on your studies and learning than dedicated specialized kitchen experiences. We are shaped and fashioned by what we love to do.

What do you like best about being a Secchia Institute for Culinary Education instructor?

As a graduate of the Culinary Institute of America, what I felt lacking in my time there, was the one on one personal touch. What I love about the Secchia Institute is that we are blessed to have the time and resources that allow us quality student interaction. Finding the pleasure of working and listening to students each and every day is happiness in itself.

What do you know now that you wished you knew when you first started out?

Personally I’m not one to reflect back on my life and experiences, no regrets. One thing I do know is that we are all given second chances, it’s called tomorrow! I would say that I have felt and observed as many things as possible in a life full of culinary pleasures. It begins every day.

What is your current obsession?

Maybe not so much an obsession but trying to identify for my students the corporate greed that is associated with filling us with sugar, salt and fats and how we as a nation have let trusting food corporations addict us to these food staples. Invest in your health!

Who is your hero?

My hero’s would be those people in our lives that do what is good, fair and right every day of every day.

In that thought I started a scholarship in my parents name over 18 years ago to honor what I felt was their commitment to education, their love of family and a lifetime of doing what was good, fair and right to those that touched their lives. This scholarship has allowed me to give back to students as a thank you for my parents’ commitment to my life.
