GRCC is where artisan brewers and expert operations professionals get their start.
The Craft Brewing, Packaging and Service Operations certificate will prepare you to understand the brewing, business, and service essentials to the craft brewing industry. With more breweries per square foot than almost anywhere in America, GRCC is ready to meet West Michigan's growing hiring needs in the craft brewing industry. Our on-site brewery provides hands-on experience into the art, science and technology of brewing, with a focus on:
- Brewing microbiology.
- Sensory analysis.
- Nutrition and fermentation principles.
- Extensive hands-on laboratory and operational experiences in our brewing lab and taproom.
- Merchandising, marketing and operations management.
- Laws and tax regulations that govern the brewing industry.
- Internship at a brewery or brewing-related operation.
Students will acquire the ServSafe Alcohol certification and take the Certified Beer Server examination while participating in the program. Students will also be prepared to sit for the Cicerone examinations and three levels of certification from the Institute of Brewing and Distilling: Fundamentals of Brewing & Packaging of Beer; Diploma in Brewing; and Diploma in Packaging. (These exams are not part of the curriculum; however, the training in the classes will assist students who choose to do these in the future.)
Upon graduation, you will be prepared for an entry-level position in a restaurant, brewery, or brewpub in:
- Sales and marketing.
- Serving, managing, or as a cicerone.
- Distribution and wholesale operations.

The Michigan Liquor Control Commission requires that students be 18 or older to enroll in classes in the Craft Brewing, Packaging, and Service Operations Certificate.
Please note: Several courses in the Craft Brewing program require class field trips and or travel to internship sites. Students are responsible for their own transportation and any cost associated with travel to the field trip sites and/or internship sites.
